Healthy Eating Takes Center Stage in Charleston

Charleston has always been a food city, featuring Lowcountry classics, seafood straight from the docks and more culinary indulgence than anyone would call “diet friendly.” Now a new chapter has started sparkling in our delicious history: Michelin stars. Naturally, we had to see what all the fuss was about and, more importantly, whether eating at this elite level could align with our goal of healthy, intentional dining. Spoiler alert: It absolutely does.

At Michelin-level dining, health lives between the lines.

Wellness doesn’t come in the form of deprivation – it comes in the form of discipline. Pristine sourcing, seasonal simplicity, plates built around balance rather than excess and consistent from-scratch preparation so flavor comes naturally, not from chemicals or shortcuts. With that lens firmly in place, our culinary “research” landed us at two of Charleston’s buzziest tables: Vern’s, the cozy, candlelit neighborhood dream of chef Dano Heinze and wife Bethany; and Malagón, the Spanish tapas stunner whose bold Mediterranean approach proves indulgence and wellness can absolutely coexist.

Earning a Michelin Star is no small feat.

Inspectors evaluate restaurants using five global standards, including ingredient quality, mastery of technique, harmony of flavors, the personality of the chef expressed through cuisine and consistency over time. It’s not about luxury for luxury’s sake; it’s about restraint, purpose and excellence. A happy coincidence, it’s also the foundation of healthforward cooking featuring minimal processing, thoughtful sourcing and ingredient integrity.

Enter Vern’s.

Dano’s culinary journey is impressive – Johnson & Wales graduate, rising to chef de cuisine under Sean Brock at McCrady’s, then refining his style in California at acclaimed spots such as Gjusta, Animal and Jon & Vinny’s before returning to Charleston to open his own restaurant. Named for Dano’s late grandfather, Vern, who owned grocery stores and a butcher shop in Wisconsin, the restaurant anchors itself in old-school respect for food.

“Our biggest accolade to date has been our receipt of a Michelin Star – a true lifetime dream come true,” the couple shared. But Vern’s was never about chasing awards. “Vern’s was born out of our desire to create the neighborhood restaurant of our dreams – a place with beautiful and nourishing food using completely madefrom-scratch ingredients, accompanied by an exciting beverage program highlighting natural wines. Our space is intended to make you feel at ease – relaxing at a table with friends in a space filled with vintage furniture, flickering candles and soulful music.”

And that warmth translates directly to the plate. Dano described his style as minimalist European-inspired cuisine, and, as a diner, the results feel refreshingly light yet deeply satisfying. One bite into the Campanelli with Rabbit, Black Pepper and Piave Vecchio, my husband looked and me and said simply, “Wow.” Wow indeed.

Match With These Providers

Accolades have followed, including a James Beard semifinalist nomination and a spot on The New York Times’ 2023 Restaurant List. Seated at the table, those honors are nice, but the neighborhood vibes prevail. Scout for reservations or do what nearby residents do and check in at the hostess stand for bar openings. Bring your wallet; prices are reflective of the food quality.

A few nights later, our exploration continued at Malagón, Charleston’s Spanish tapas darling and Michelin awardee.

From the moment we sat down, the service felt warm, easy and perfectly timed. Each tapas plate somehow outdid the last as inspired menu explanations floated effortlessly over a packed dining room. The Michelin Guide calls the menu “deceptively simple and deliciously surprising,” and it’s the perfect description.

Built on olive oil, bright acids, seafood and beautifully sourced meats, Malagón’s Mediterranean approach keeps flavors bold without heaviness. The legendary La Bomba delivered every ounce of its reputation. Iberico pork, smoky squid, tender grilled octopus and the lamb zorza formed what could only be described as a symphony of flavors. As a gluten- and dairy-free diner, clean options for me to enjoy were plentiful, though I couldn’t resist stealing a pinch off my husband’s warm stack of sourdough bread. There were so many allergy-friendly and clean-sourced tapas treats to try that it was like unwrapping culinary gifts as each of them arrived.

We couldn’t catch up with Juan Cassalett, executive chef and co-owner of Malagon, but he is widely known for his authentic Spanish tapas, flavorful paellas with perfect socarrat, as well as his connection to the beloved local spot Chez Nous, run by his wife Jill Mathias.

We left a little fuller than planned, but glowing, energized and already plotting our starry return.

Together, Vern’s and Malagón capture Charleston’s culinary evolution away from excess and toward mindful indulgence.

Here, health is simply what happens when craftsmanship comes first. When food is treated with care and integrity, dining well becomes dining well for body, soul and appetite alike.
